Chocolate Chip Truffle Balls
This recipe is an adaptation of Susan's post for Raw Sunflower Seed Almond Butter Cacao Chip Balls on my favorite site Rawmazing! If you ever want an amazing nutritious cookie that the kids and adults alike will just devour.
Makes 20-24 cookies
2 cups almonds
1 cup sunflower seeds
1 cup raw oats (with or without seven seed mixture)
1/2 + 1/4 cup coconut sugar, divided (you can also use raw sugar)
1/2 cup Vegan Chocolate Chips (or Cacoa Nibs)
pinch Grey Celtic Sea Salt (or Himalayian Salt)
2 tablespoons coconut oil (can omit and just 2 tablespoons water)
1. Place almonds and sunflower seed and pinch of salt in high-speed food processor with S-blade and blend until very smooth (about 20 minutes).
Alternatively, make the nut-butter following the instructions here: Almond Butter
Mix all ingredients together using 1/2 cup coconut sugar.
2. Roll into balls and roll in remaining coconut sugar.
3. Refrigerate to set.
