Very Berry Pie
This is the best Berry Pie! Why? No Refined Sugar, No Cooking. With a food processor at hand and some thawed or fresh berries, this pie is a quick fix for a delicious dessert anytime, anywhere!

Start with these ingredients:
1 Cup Walnuts
1 Cup Pecans
2 Pinches of Grey Sea Salt
Mix them up in the food processor until ground. Then Add . . .
1 Cup Pitted Medjool Dates
Process until blended and sticky. Press into a greased pan. (I grease with coconut oil)
In this picture I am using a tart pan, but I have made this dessert in a square or round cake pan and even in little custard dishes.
Put into the freezer
Now you are ready for the next step.
In the same food processor put . . .
2 Cups of Berries (excess liquid should be strained from berries)
1 Cup of Pitted Medjool Dates (More if you like sweeter)
Pinch of Grey Sea Salt
Blend until thick a creamy -- give it a taste test and add more dates if not sweet enough. You can also add either Maple Syrup or Agave nectar for a little added sweetness!
Once blended fold in the rest of the berries and . . . Do Not Process
2 Cups of Berries
Remove the pie pan from the freezer and add the berry mixture. Put back in the freezer for a least one hour (preferable 2-4) and serve! (If you want whip cream then throw a can of coconut milk in the freezer for at least 30 minutes. Remove and skim cream off top and whip like regular cream--place on pie)
